I can't think of any other way to describe it and I don't mean to sound rude, but the spine area looks like minced meat while the flesh around it looks like cooled chocolate syrup!
There are many great textures you can plop in the materials folder from the "resource sharing" thread. You may want to switch between materials while sculpting because the tonal range is different in each material, which emphasizes dramatic triangle angles in highlights and shadows. This reveals where the model is too smooth, harsh, or detailed.
I can't wait to see what this looks like when you've focused on the skin textures in paint mode. You could have a lighter color and bump map for the belly, while the beak may get a slightly spottled bone look.
